Husband and wife team Stevie and Amanda Lane are setting out to put the town of Tuam on Ireland’s culinary map with their restaurant and bar, Brownes.
The couple have opened a bar and restaurant in the heart of Tuam, Co. Galway. The cosy bar has a wide selection of craft beers, wines, spirits and cocktails and the restaurant showcases modern, seasonal cooking using fresh local produce.
Located in the heart of Tuam’s town square Brownes is a pub with a lot of history in the town. As with many old Irish pubs, Brownes was a ‘one stop shop’ where you could buy your weeks groceries, have a few pints and in this particular bar... even sell your wool in the family wool merchants out the back. The pub has always been associated with the band The Saw Doctors and much of the video to their number one hit ‘N17’ was filmed in the bar in 1991.
Brownes also holds personal history for the new owners as this is the very place they met originally while working behind the bar at weekends during college.
Stevie and Amanda carried out an extensive refurbishment on the unit and gave it a new breath of life. They have maintained the character of the small front area which is now known as ‘The Grocery Bar’. With it’s open fire, wine, cocktail, spirits and craft beer selection it’s an excellent place to relax over a few drinks. The old back bar has been transformed into a restaurant serving modern seasonal food in small sharing plates or tapas style dining.
Stevie trained and worked with some of Dublin’s top chefs including Derry Clarke of L’Ecrivain, Stephen McAllister of The Pig’s Ear and John Wyer of Forest Avenue. He has taken his experience of modern Irish cooking and his love of using local seasonal produce and applied this to his cooking at Brownes. Stevie said “it’s great to have so many amazing producers right on our doorstep. We list all our suppliers on the back of our menu and it’s great to be able to glance down through the list and see so many from just out the road. Our goat’s cheese is from Larry of the Galway Goat Farm in Dunmore, our salad leaves are grown by Aitor of Fuinseog Farm in Corofin. We are getting delicious rare breed pork from Dave in Andarl Farm only half an hour down the road in Claremorris and that’s just a few.”
It would seem that having spent 12 years living and working in Dublin this couple have brought a little slice of it with them to their hometown of Tuam. Brownes is a modern take on the traditional pub offering that desirable mix of traditional comfort with a modern approach to high quality cuisine.
